Consistently Paleo: Delicious pancakes with chia seeds for breakfast
The Paleo diet has many advantages. It's healthy, helps you lose weight, and improves your overall physical well-being immensely. But sometimes you just have a breakfast craving for delicious, sweet pancakes. If you want to stick to the Paleo diet, you'll have to give them a miss...

Not at all! This recipe for pancakes with chia seeds, bananas and berries is consistently "Paleo", tastes and makes you full for hours without unduly burdening the calorie budget.

Chia seeds, the superfood from Guatemala and Mexico, make it possible. Chia seeds contain twice as much protein as other cereals and, above all, soluble fiber, which ensures that carbohydrates are broken down very slowly. Thus, the body can be supplied with energy over a very long period of time. Positive side effect: You stay full longer.

For our Paleo Chia Pancakes you will need:
3 tablespoons chia seeds
4 eggs
2 bananas
Fruits and berries at will
a little coconut oil.

Mix bananas, eggs and chia seeds until homogeneous. If the bananas are fully ripe, you can mash them with a fork or potato masher. For fresher, harder bananas, you should use the masher or blender to help. Once that's done, whisk the mixture until fluffy. Finally, fold in the berries or the fruit, cut into bite-sized pieces.

Now heat a non-stick frying pan and add the coconut oil. If you want to bake small pancakes, put a tablespoonful of batter into the hot fat. Of course, you can make several pancakes at once in one pan. For a large pancake, add a ladleful of batter to the pan and smooth the surface. After two to three minutes, brown edges should start to appear, at which point you will need to flip the pancake. Since the batter breaks easily, the best way to help yourself is to use a trick: put a plate over the pancake and flip the pan. Now the pancake is lying on the plate with the browned side up. You can easily slide it back into the pan and bake the other side.

When all the pancakes are ready, serve them with honey, maple syrup or a topping of your choice. But these Paleo Chia pancakes are also a treat on their own.
